Spain is no longer the seafood heaven it once was. The
economic revolution the country has gone through has decimated
the once abundant seafood and made it expensive. Spanish
seafood (amongst the best in the world) is only to be found in
a few restaurants like Combarro (80€), O'pazo (90 €),
Sanxenxo (80 €), etc.. To the restaurant's bill you will
have to add taxi fare since these restaurants are not in the
city center. Of course there are tapas bars in the city center
that serve seafood, but do not be caught unawares, if they do
not say the source of the seafood, you can be sure it came from
places like Gambia or China.
Join a small group

to taste their specialties accompanied by RARE WHITE WINES

Tour details:
1) First tapas bar: Gambas al ajillo with
chilled Cava wine
Perhaps the most popular tapa in Spain and in Spanish
restaurants worldwide, gambas al ajillo, or
fried garlic shrimp. It is a shame that 99% of restaurants use
shrimp from China. We use the shrimp Huelva-Spain, much more
expensive but a delicacy that makes all the difference.
Cava, is made like Champagne but uses
Spanish native grapes instead.
We are currently tasting a 7-year-old Cava from a tiny
winery. This is a chance for the Cava lover to taste something
unique and hard to find.
2) Second tapas bar: Vieiras (scallops) a
la Zapatera with unfiltered pale sherry
Vieiras is the most representative
shellfish of Galicia. Galicia is the most representative
shellfish region of Spain. Needless to say tasting Vieiras is a
must for any seafood lover. But watch out, Vieras easily build
up a dangerous toxin produced by fitoplancton. Make sure that
you eat them from someone like us who get them from the most
relaible supplier: Vieira de Galicia, S.L. and forget about the
inexpensive but also dangerous ones you can find in the black
market.
Unfiltered pale sherry, we are happy to be
the only chance to taste this wine in Madrid. Drawn from the
best barrels and bottled unfiltered, giving it a much fuller,
livelier and more complex character. If it is so good why is it
only us that have it?. First of all most people do not know of
its existance, secondly the wine has to be drunk within a
fortnight.
3) Third tapas bar: Seafood paella with
Albariņo wine
Seafood paella (paella marinera)
Albariņo is likened to both Riesling and Viognier, Riesling
for its minerally character and Viognier for its bouquet of
peaches and apricots. This varietal is the white hope in a
country of reds.
